in Sanya Hainan Island
Chinese
food is full of variety and interest, and will normally excite the
taste buds with its enormous range and choice. China is the world's
third largest country with about 20% of the world's population. In
this enormous country diet, menu, flavors, restaurant style, and
presentation vary considerably around China. Do try, taste, and
treat your taste buds to a whole new world of exciting dishes.
Unlike most other countries, in China all
dishes ordered are served as they are cooked, and the variety often
arrives at your table together. If you require them to be served in
a precise order you should request this when ordering. Dining in
China is a wonderful experience, but just like everywhere else in
the world, restaurants vary. Do try several, and do be adventurous.
You can turn a trip to China into a whole new culinary treat.
Across
China visitors will usually receive a very warm welcome in all
restaurants. Many restaurants have an English version of their menu
- although the translation may not always be word perfect. However,
the desire to please you and make you feel welcome will very quickly
overcome any barrier language may present.
Visitors quickly discover that there are
eight very different regional schools of Chinese cooking - Beijing
(or Peking), Guangzhou (or Canton), Fujian, Jiangsu, Hunan, Sichuan,
Shandong, and Shanghai. Sanya, with its tropical climate and
wonderful Caribbean style beaches at the southern end of Hainan
Island, is a wonderful location to savor all of these and more. You
are invited now to let your taste buds run wild and learn a little
about Chinese regional specialties in preparation for your first
trip to Sanya on Hainan Island.
Hainan Cuisine, prepared with
local produce, is deservedly known far and wide. Both 'Qiongztou
Coconut Milk Dish', and 'Hainan Chicken in Coconut Milk' have won
gold and silver medals in culinary arts competitions. Other
specialties such as Wenchang Chicken, Jiaji Duck, Dongfang Lamb,
and Hele Crab are four great dishes of Hainan and are known
throughout Southeast Asia. Seafood on this beautiful tropical island
is, of course, superb. Please feast your imagination now on the
following descriptions.

Wenchang
Chicken is boiled, and then cut into pieces. The diced chicken
is then dipped in mixtures of chopped ginger, salt and other
spices, and eaten. Wenchang chickens are small, fed with coconut
and peanut bran, and raised in coops high above the ground. As a
result the meat is tender, the skin smooth and the bones soft.
These chickens, coming from the north east of Hainan Island, are
plump and have relatively low fat.

Jiaji Ducks are
raised along Wanquan River in Jiaji,
Qionghai
in the central eastern side of Hainan Island. As the ducks grow,
this special breed is kept in coops and fed with rice grain, sweet
potato, and chaff so that it develops thick meat and very little
fat. The traditional way to prepare ducks is to boil them in
water, dice the meat, then eat with mixture of vinegar, chopped
ginger and sesame oil.

Dongshan
Sheep are raised on Dongshan Peak, Wanning on the east side of
Hainan Island. The mountain's tender Zhegu tealeaves are the
favorites food of the sheep. The meat is therefore aromatic and
non-greasy. It tastes delicious alone or can be made into a rich
soup.

Hele Crab is
found in the inland sea by Hele, Wanning. The crab is very tasty,
tender, and crispy.

Grouper Fish
caught locally, are by nature of our very clear sea, extremely
tasty. Steaming and serving with locally made sauces ensures Its
tender meat containing 20 percent protein, and vitamins A, B and
C, and iron arrive at your table in perfect style.

Oukou Clam is a
product of Qukou Bay in Qiongshan, and is also called Blood Clam
due to its blood red color. It is rich in protein, vitamins A, B
and C. Cooked in boiling water; it is then served with a mixture
of chopped ginger and vinegar.

Yangshan-Yong Sheep are raised in
sheep pens near the extinct volcano in Yangshan area, Qiongshan.
The meat is tasty and tender, and is prepared by boiling, stewing
or baking. (Cannot find these places on any of my maps - please

Sanya Sea Snake
is a product of local fishing. This delicate meat can be cooked
with chicken
or
made into dried food. The snake is also used for medicinal
purposes.

Dazhou bird's Nest
is a product of Dazhou, a very small island off the east coast of
Hainan Island close to Wanning, where the golden swallows
assemble. The nests they build are transparent and white. They are
used in Chinese traditional medicinal food that is believed to
benefit our lungs.

Fushan Roast
Suckling Pig, crisp, golden brown and with delicious meat
inside, is a specialty in Fushan, Chengmai in the north of Hainan
Island.

Lingshui Pipa Crabs,
grown in Xincun Port, Lingshui, on the south east coast of Hainan
Island, derives its name from a musical string instrument because
of its appearance. The taste is like a marriage between crab and
lobster. They are normally only available between January and
March.

Dongfang Sliced
Boiled Lamb (but often translated incorrectly as 'mutton') is
another specialty, raised along the coast at Dongfang, on the
west coast of Hainan Island. The lambs, normally weighing about
five kilograms are both tasty and tender with a unique Dongfang
flavor.
